Valentine’s Day and Pink Cookies

Happy Valentine’s Day!

Need something pink to whip up for Valentine’s Day?

When I saw this recipe for Strawberry Chocolate Chip Cookies on Pinterest, I knew Norah and I would have to try these. Pink chocolate chip cookies! What in the world! Perfect for the Princess.

And as you will undoubtedly visit the aforementioned lady’s lovely blog, you clearly will see a stark contrast –  yes, her pictures are amazing. Yes, my pictures are not amazing. My cookies don’t even look very pink, but I assure you, they were a lovely pink, and they were pretty yummy too.

So anyway…to make Strawberry Chocolate Chip Cookies –

Gather your ingredients.

You will need:

  • 1 box strawberry cake mix (18.25 oz.)
  • 1 tsp. baking powder
  • 2 large eggs
  • 1/3 c. vegetable or canola oil
  • 1/2 tsp. vanilla extract
  • 1 1/4 c. semisweet chocolate chips
  • sprinkles (optional)

First, open the cake mix. This may prove more difficult than it sounds.

Then combine the cake mix and the baking powder in a large bowl. After a bit of stirring, you may feel like some sprinkles might be just the ticket like Norah did.

Now add the eggs, oil and vanilla.

Stir. Stir. Stir.

Add your chocolate chips. Stir. Then scoop them onto a cookie sheet, preferably on parchment paper. We were out of parchment paper, but it still worked fine.

Bake at 350 degrees F for about 8-10 minutes. (Just don’t let them get brown – like I did!)

Voila! Pink Valentine-y cookies fit for a princess.

    • I laughed out loud when I read your comment. 🙂 You are right – that is a big bag of chocolate chips – ridiculously big! We don’t mess around in our house when it comes to chocolate chips!
